Chemical composition of the fruit of Artocarpus altilis commonly named Breafruit or "Djité" in Togo or "Blèfutu" in Benin, was studied. Proximate analyses indicate that it is rich in starch, but low in proteins and lipids. As compared to cassava and yam, it contains less carbohydrates (78%), but the amount of proteins (4.67%) is higher. Even though it contains fewer amounts of lipids, its conposition shows the presence of essential fatty acids (linoleic and α-linolenic acids : 27% and 17% respectively) necessary for fighting against cardiovascular diseases.
Except for the functional properties of its organic substances, it could be a good substitute for these tubers and roots and a good source of trace elements such as Zinc (4.7 mg/100g) and Magnesium (2.6 mg/100g)(Résumé de l'auteur) |
